The Kai Shun Classic Hollow-Ground Slicing Knife (DM-0720) is a long, thin sujihiki carving blade made in Seki, Japan for cutting ultra-thin, uniform slices of roasts, hams, and fish without tearing. Its 9 inch double-beveled edge is hand-sharpened to a precise 16-degree angle on a VG-MAX super-steel core rated 61 HRC for lasting sharpness, clad in 32 layers of Damascus steel. Scalloped hollow-ground dimples along the blade create air pockets so delicate proteins do not stick. The water-resistant D-shaped Pakkawood handle with a stainless bolster and end-cap balances the lightweight blade for fatigue-free carving. Hand wash and dry only.

How to Use:
