The Kai Shun Premier Tim Malzer Nakiri Knife (TDM-1742) is a traditional Japanese vegetable knife, shaped like a small cleaver and hand-forged in Seki, Japan. Its 14 cm flat, squared-off blade makes full contact with the board in a straight push-cut, so there is no need to rock it. A VG-MAX super-steel core rated 61 HRC holds a razor edge, clad in 32 layers of Damascus steel, with a hand-hammered tsuchime finish that lets wet, starchy vegetables fall away cleanly. The full-tang walnut Pakkawood handle is resin-stabilized and waterproof. The tall blade gives knuckle clearance and doubles as a scoop. Hand wash and dry only.

How to Use:
